Pizza Style - New York Slice
# TLDR
If you are looking for a slice for a quick lunch on the go, to satiate your appetite or a midnight snack, I could not recommend Jays Pizza more! Even though it is the only proper slice in the area it was worth a return trip.

# Classic (Margherita)
## Dough
Very thin, light in flavour. The dough has a decent amount of "flop" to it but can still be eaten comfortably without needing a fold. The crust has a nice even cook with some charred spots throughout. As Paris is known for baguettes I wasn't surprised to find the crust with a good amount of bubbles. Overall, the crust is spongey to the touch yet crunchy to to the bite, the perfect combo!
## Sauce
*Extremely sweet*, in the best way! The sauce itself is completely covered by the cheese so there are little to no chunks of tomatoes, which makes me think it is a blended tomato sauce. The sweetness makes me think that this sauce has a few other ingredients in it (not necessarily sugar) or potentially its just a very sweet tomato!
## Cheese
The cheese is very uniform and covers the entire slice. The cheese is well balanced with a nice salty *tang* to it. The cheese and sauce have blended together perfectly effectively becoming a single entity.
## Extras
Nothing too extra here, I drank water with the pizza so no major flavour changers are in the mix. Other than that I did order this as takeout meaning it came in a pizza box, but the owner (super rad dude) put a piece of parchment paper over the slices to ensure that no cardboard bits fell on the slices! This guy knows his stuff.
Note while the pizza does have a single piece of Basil this is effectively a cheese slice. But the basil was a nice touch!

# Pepperoni
The pepperoni on this pizza changes the slice significantly, it balances out the sweetness of the sauce. The pepperoni has the classic New York cupping and is properly thick, this allows for some *amazing* cups of liquid gold. The pepperoni are wonderfully spiced giving a burst of flavour in each bite.
The pepperoni also influenced the cheese and sauce quite a bit. It gave the entire slice a bit more moisture keeping the two separate. (i.e. the cheese is on top of the sauce instead of being one with the sauce). This lead to a more juicy bite compared to the classic, not necessarily better, just different.
This added moisture also increased the flop of the pizza quite a bit, this slide needed the "fold".
